Today, my mom’s friend Maggie showed me how to make adobo. She is this tiny Filipino woman who is very vivacious and loves to talk.

Below is Maggie’s recipe for Pork Adobo.
•    Garlic
•    Black whole peppercorn
•    Onion, ½ chopped
•    4-6 Bay leaves
•    Pork (we used pork ribs – cut in half)
•    Soy Sauce

Peel and smash the garlic. Place the pepper corns, garlic, chopped onion, and bay leaves at the bottom of the pan you are using to cook the adobo in. Soak/Rinse the pork in warm water for several minutes. Rinse each piece as you place it in the cooking pan. Mix the water and soy sauce to your personal flavor letter. Pour over the contents of the pan. Cover pan and bring to a boil. Reduce heat, so contents is simmering. Cook until meat is very tender and liquid is reduced.

Maggie said that it can be served with rice, baked or mashed potatoes.

Every year, the local quilt guild puts on a quilt show around mother’s day. My grandmother comes to Alaska specifically around this time so she can be a part of it. My grandmother started quilting when she was 70 years old. She said that she has made close to 200 hundred quilts in the last 18 years.

Last weekend, Cory and I headed up to Yakima to spend time with his Dad and stepmother, Alison. We had planned to leave around 3:30pm on Friday but instead left around 4ish. Translating that to Corkert time means that we left a head of schedule.

The bridge from I-84 to Hwy 97 in Biggs Junction has been under construction since January. There was a sign that suggested drivers take an alternate route but didn’t suggest which alternate route to take. Cory and I crossed the Columbia River via the Bridge of the Gods. The drive on WA 14 was beautiful. The farthest we has been on WA 14 was the west side of Stevenson, WA. The town reminded me of Poulsbo, WA because of how there was a historic downtown centered near the waterfront. There appeared to be quite a few good restaurants there. The rest of the drive up to Yakima was extremely pleasant.

We arrived about 8:30, had dinner and watched Oh Brother, Where Art Thou?. (I had not seen this movie before dating Cory. Now, I’ve seen it about 5-6 times. He watches it every time he visits.)

Saturday morning was spent relaxing and deciding on our plans for the afternoon and evening. We went to the Cinco de Mayo festival in Sunnyside. I was able to have my first mango with chili powder and lime on a stick. Alison has the messy photos of me eating it. Yummy. I tried to recreate it here in Portland but forgot to use lime to have the chili power stick. Now, I know for next time. Alison took some photos of Cory and I being silly. Someday, I’ll have to get copies of them from her. *grin* Afterwards, we saw the real reason for the weekend’s trip. We saw…

IRONMAN

AWESOME MOVIE!

I am ready to watch the sequel. Unfortunately, it won’t be ready for a year or two yet. Cory told me he was going to buy it on DVD, when it comes out. Yep, he better! The movie was the best comic book movie I have seen since the first or second X men movies.

Dinner was at an excellent hole in the wall restaurant that served pizza, falafel, curries, and gyros. Very good food. Alison made banana splits for dessert. Cory and I asked to share one because we were hoping to get a smaller serving. Nope! But it was good!

Sunday morning, we busted out some Batter Blaster and made us some pancakes. (Batter Blaster is organic pancake batter in a redi whip type can.) I was looking at a website that talked about weird kitchen inventions/products. Batter Blaster was there. It is pretty strange. The pancakes turned out well, springy texture, slightly sweet. I think that I still like Krustez whole wheat pancake mix better.

The rest of the day was spent cleaning out the car, Barbecuing (Cory and his dad), and crafting. It was a very relaxing Sunday.

On Friday, I got off of work at 4 pm to get our stuff and pick up Cory from work. Cory ended up meeting me at home. Somehow, we got on the road at 5:30. It was wonderful being able to use the carpool lane and swish past the gridlock on I-5. The drive up to Bremerton was the fastest that we have ever driven it (about 3 1/2 hours).

We arrived about 8:30pm to be greeted by the dogs and Neil. Debbie said that she didn’t even hear us come in. After greetings were exchanged, the four of us sat down and chatted about random topics ranging from… Well, neither Cory or I remember what we talked about. I remember the feeling though, very pleasant and comfortable. After dragging our stuff inside at about midnight we went to sleep.

The next three days were VERY relaxing. We did some fun things and I want to be able to share them in individual posts. So, until then please pretend that the suspense is building.

I was talking to myself as I left work yesterday, “I wish it was Friday, already.” A co-worker over heard me and just laughed. Why do I wish it was Friday already? Well, because Cory and I are wandering up to the Bremerton area to see his Mom & Neil. I was looking for a photo of them but I can’t find one. Anyway, here’s a a photo of Spunky the dog and Tim the invisible cat. Invisible cat…
