Merry Christmas!

It’s a romantic full moon, when Pedro said, “Hey, mamacita, let’s do Weeweechu.”
“Oh no, not now, let’s look at the moon!” said Rosita.
“Oh, c’mon baby, let’s you and I do Weeweechu. I love you and it’s the perfect time,” Pedro begged.
“But I wanna just hold your hand and watch the moon.” replied Rosita.
“Please, corazoncito, just once, do Weeweechu with me.”
Rosita looked at Pedro and said, “OK, one time, we’ll do Weeweechu.”
Pedro grabbed his guitar and they both sang…..
“Weeweechu a Merry Christmas, Weeweechu a Merry Christmas,
Weeweechu a Merry Christmas, and a Happy New Year.”

P.S. My Aunt sent this to me and I just wanted to share it.
I just wanted to write a post about how our Christmas holidays have been going. Cory and I spent the weekend before Christmas at his Dad’s house. After work we left for central Washington. The weather forecast was predicting snow up in the pass area. In Troutdale, we stopped to get gas. The truck in front of us was a big ol’Chevy all tricked out and pretty snazzy.

I was sure that a guy in in 20’s or early 30’s would get out.

Instead, it was this guy.
Seeing this guy hop out of the truck was a great way to start a trip that was in full stress/anxiety inducing mode. Plus his ball hitch cover was pretty spiffy. The eyes lit up with red LED lights. I am kind of bummed that I wasn’t able to get a picture of it lit.

We arrived at Cory’s Dad’s house about 9ish. Cory and I were debating about the bible and Christianity for the last half of the drive. Oh, my head hurt! It still aches slightly thinking about it. Cory was so involved in the conversation that he “lost his way,” meaning that he needed to slow down to find out where he was. We were able to settle down in the family room and just spend time talking. It was so relaxing after a long day and drive.
Alison (Cory’s step-mom) gives everyone stockings at Christmas. Last year, I took time and knitted stockings for Cory and myself. This year I knit stockings for Luis (Cory’s dad) and Alison. Luis was very possessive of his stocking. Alison would be looking at it and he’d grab it back, clutch it to his chest and say “Mine.”I guess it was good to know that he likes it.

It was so nice to be able to fall into a very comfortable bed at the end of the day. We awoke up refreshed on Saturday morning. Alison made breakfast, while I helped with the toast. The toaster kept beeping at me and wouldn’t start toasting the bread. Finally, it started working after Luis took a look at it. Then the toaster was spitting the toast back at me. I had turned my back to continue talking when there was a swooshing sound and a thud. (The toast landed right on the cutting board where I would have placed the toast there to butter it.) Side note – here’s my one of my favorite Calvin and Hobbes comics.

It seems like for the last several years there has been some type of food character. Mr. Pankey came to the beach and Christmas 2006. Mr. Squash was at the beach.

This year it was Mr. Breakfast, he’s a well rounded character.

Then Cory had to demolish him.
The best part about Christmas with Luis and Alison was being able to give them their christmas presents. Luis is extremely hard to shop for. We gave him some exercise shorts and a new sweatband. Cory picked out a headlamp that he can use when he works on his car.

Alison’s gifts were pepper jellys from Rose City Pepperheads. She also kept talking about this calendar that counts down the days till Bush’s last day in office. I was lucky to find that last copy at the bookstore and have it wrapped there. She was so surprised and excited when she received this gift.

“My calendar! How did you know?”

“I love it!”
The weekend was very relaxing. Cory, Luis and Alison gave me a tour of where Cory grew up. He had a pretty amazing yard to play in when he was a kid. He said that he grew up in a hops field and he really did. His house was surrounded by hops fields on all four sides. We also just spent time talking, watching movies, and holding cats (well, I spent time holding a cat.)The weekend was a great one. I wasn’t looking forward to Christmas but this weekend was a restorative one for us. It was a good way to start the holiday season.

Cory was looking through our cupboard for fixings for dinner. Tuna Casserole some how came up in the search. Here’s a really quick recipe for Tuna Casserole that I found online. I think that it may make a good base recipe. Well, I’ll find out in about 10 minutes.

Boil water and cook macaroni for 2 1/2 minutes (al-dente). Add frozen peas to pasta and water and cook for another 2 1/2 more minutes. Mix the powder cheese, milk, and cream of mushroom soup. Add mixture and drained tuna to the peas. Transfer to baking dish and sprinkle bread crumbs on top. Broil for several minutes until topping is golden brown.
Serve.

After the tasting…
It’s bland! I made it without any salt or pepper. It really needs some pepper to add more to it. Cory says he’ll pass on this tuna casserole and go for this one from Simply Recipes, which is a wonderful collection of recipes.
* I first forgot to turn the burner on for the water to boil. About 5 minutes later, I realized that it wasn’t on. There was a burner in use (on simmer) that I put the pot on. About 30 minutes later realized that it was on simmer, when the water was barely bubbling. Finally, the water (heat was turned on high) started to boil. The recipe came together extremely quickly after that. *grin*
Million Dollar Salad
Ingredients
- 1 1/2 c Mini Marshmallows
- 8 oz Cool Whip
- 14 oz can of pineapple chunks
- 14 oz can of sweetened condensed milk
- 20oz Cherry Pie Filling

1/2 cup of chopped pecans
Mix together pie filling & condensed milk. Add the pecans, marshmallow, and well drained pineapple. Fold in cool whip. Refrigerate overnight until salad is set-up.
